En el Día Internacional de Concienciación sobre la Pérdida y el Desperdicio de Alimentos, WWF Colombia publica un estudio realizado en 8 ciudades colombianas para saber qué tanto relacionamos el desperdicio de alimentos con la crisis ambiental.
La mayoría de encuestados no entienden el impacto que su alimentación tiene sobre la naturaleza y aunque tres de cada diez colombianos afirman que no han desechado comida en el último mes, las cifras son desalentadoras: el desperdicio en los hogares colombianos se calcula en 1,5 millones de toneladas anuales, equivalente a 32 kilos per cápita.
En el mundo, aproximadamente el 40% de la comida que se produce no se consume, y representa el 10% de las emisiones de gases de efecto invernadero globales, siendo el desperdicio una de las mayores amenazas para el planeta.
El 29 de septiembre de 2021. La mayoría de los colombianos cree que no desperdicia mucha comida, según un estudio de WWF realizado en ocho ciudades. La investigación evidenció que sí hay prácticas cotidianas que llevan al desperdicio, principalmente asociadas al mal almacenamiento y al inadecuado manejo de comida preparada o sobras. Hay que generar conciencia sobre la Pérdida y el Desperdicio de Alimentos, revelamos qué piensan los colombianos frente a este problema y qué están dispuestos a hacer para evitar que la comida termine en la basura.
“Al igual que ocurre en otras partes del mundo, los colombianos tenemos una disonancia frente al desperdicio: decimos que no lo hacemos por vergüenza o por considerarlo éticamente incorrecto, pero lo hacemos en la práctica, e incluso nos justificamos cuando ocurre”, explica Camila Cammaert, Coordinadora de Sistemas Alimentarios Sostenibles de WWF Colombia.
Esto es preocupante si se tiene en cuenta que la manera en la que consumimos y producimos alimentos en el mundo es la principal causa de la transformación de la naturaleza y la pérdida de biodiversidad.
El estudio Desperdicios: imaginarios, actitudes y comportamientos en Colombia realizó 1950 encuestas y visitó 47 hogares en Bogotá, Medellín, Cali, Barranquilla, Bucaramanga, Florencia, San José del Guaviare y Leticia, para entender si los colombianos comprenden la relación de los alimentos con el cambio climático y la pérdida de biodiversidad. ¿Qué encontramos? Que en Colombia existe un gran desconocimiento frente a esta situación, y las personas creen que su forma de alimentarse no es determinante en la crisis ambiental.
El desperdicio es uno de los aspectos clave del análisis, pues el 10% de las emisiones de gases efecto invernadero, causantes del calentamiento global, tienen que ver con la comida que no comemos. ¿Cómo entienden los colombianos esta problemática? Estos son los principales hallazgos:
El desperdicio es un asunto tabú y muchas veces se esconde: aunque según el Departamento Nacional de Planeación, cada año, en el país se pierde el 34% de los alimentos producidos, nadie quiere hablar de ello. Frente a la pregunta sobre la frecuencia en la que se desechan alimentos, un 31,6% de los encuestados manifiesta no desechar comida, mientras que el promedio de veces que la gente afirma desechar comida, alimentos o ingredientes, que se hayan dañado por algún motivo, es de 1.9 veces por semana. Estos datos, bajos en apariencia, demuestran cierto grado de negación frente a la práctica de desperdiciar comida.
La abundancia es percibida como la principal causa de desperdicio: el 30,8 % de los encuestados considera que la principal razón por la que desperdician alimentos es que cocinan demasiado, y el 25,3% porque se sirve mucho en el plato. “Los colombianos expresamos muchas veces el amor a través de la comida. Mucho amor significa, en ocasiones, servir grandes porciones que pueden llevar al desperdicio. Necesitamos que desde las familias fomentemos que el cariño también se demuestra al no botar la comida, al cuidar al planeta y entendiendo que la naturaleza es quien nos permite tener nuestro plato lleno”, contextualiza Cammaert sobre este punto.
Existe la creencia de que hay desperdicios más “graves” que otros: el 65% de los encuestados considera que lo que más se desperdicia es la comida ya preparada, mientras que solo el 21,7% considera que lo que más se desperdicia son alimentos parcialmente usados (media cebolla, un pedazo de sándwich, etc.), lo que demuestra que desechar estos alimentos no es necesariamente percibido como desperdicio, sino como una parte normal del proceso en la cocina.
Las motivaciones para desperdiciar menos: las personas afirman que la posibilidad de ahorrar dinero con un 41,7% y el querer administrar su hogar de manera más eficiente con un 46,2% son dos de las principales razones que los llevarían a reducir la cantidad de alimento que se desperdicia en su hogar. Pese a no estar dentro de las principales motivaciones, el deseo de reducir su impacto en el medio ambiente, resultó ser una razón más fuerte para reducir el desperdicio que comer una dieta más saludable.
La estrategia que las personas tienen frente al desperdicio es desechar: cuando los colombianos se enfrentan al desperdicio de alimentos creen que la única manera de resolverlo es llevándolo rápidamente a la caneca. Esto demuestra que no están tomando medidas para darle un mejor manejo a sus alimentos, y es otra forma de negar el problema. El 21,5% de los encuestados afirma que no sabe cómo puede reducir el desperdicio de alimentos.
“Si se tiene en cuenta que el 40% de toda la comida que producimos en el planeta no se come, es indispensable empezar a entender por qué y qué debemos cambiar para evitarlo. No sólo estamos perdiendo o desperdiciando los alimentos en sí, sino recursos tan valiosos como el agua usada para producirlos. Este informe es un insumo clave para que abramos la discusión y empecemos a medir en cada hogar qué desperdiciamos y por qué. Este es el primer paso para implementar soluciones como cambiar la frecuencia de compra, lograr un mejor almacenamiento o darles un uso más creativo a las sobras ¨, explica Cammaert.
Aunque el estudio demuestra que los imaginarios, actitudes y comportamientos frente al desperdicio son bastante homogéneos, se destacan algunos hallazgos particulares en las distintas ciudades:
Bogotá: los bogotanos son los que más dicen desechar comida por vencimiento de los productos. Un 36% lo afirma.
Barranquilla: a la hora de comprar alimentos, los barranquilleros son los que más se preocupan por la estética y buena apariencia de estos con un 84,7%.
Bucaramanga: los bumangueses son los que menos perciben la cantidad de comida que desperdician. Un 36,1% afirma que no desechó ningún tipo de alimentos en el último mes.
Cali: un 96,1% de los caleños afirma que la fecha de vencimiento es muy importante a la hora de elegir los alimentos que va a comprar.
Medellín: es la ciudad donde más se afirma que se desperdician alimentos parcialmente usados, por ejemplo, unas cuantas rebanadas de pan o una cebolla a la mitad. El 30,9% lo dice.
Ciudades amazónicas (Florencia, San José del Guaviare y Leticia): los habitantes de ciudades amazónicas son los que más importancia le dan a no desperdiciar alimentos. Un 94,6% considera muy importante no desperdiciar alimentos al momento de consumirlos.
